INGREDIENTS:
1 tbsp vegetable oil
140g sliced shallots
100g streaky bacon, chopped or 85g chorizo sausage
1 tbsp plain flour
500ml fish stock
225g new potato, halved
100g sliced leeks
pinch cayenne pepper
300ml milk
200g fish
4 tbsp single cream
120g prawn tail meat
200g clam meat
150g squid rings
70g mussel meat
small bunch parsley, chopped
crusty bread, to serve
