An underrated relation between squid and octopus and similar in taste, it is also known as the ink fish. Cuttlefish have a large head with a bone-like structure, and small tentacles and contain copious amounts of black ink that are harvested for use in pasta and risotto.

The flavour is very similar to squid but it is much thicker and has great texture. Pieces of cuttlefish are coated in batter, deep-fried, and then stir-fried with chillies, garlic, and scallions. The dish is finished with a generous dusting of a special salt and pepper mix that contains some aromatic spices. Serve as an appetiser or as part of a larger meal along with some white rice.
